If we’re being honest here, I wouldn’t consider myself to be much of a cook. I like the sweeter side of life, and my culinary creations fall under a similar category. Baking is my forte, so when I cook up a “masterpiece,” (This is a stretch, I know) I get all kinds of excited. It’s almost an out of body experience, as if I don’t believe that my hands made these delicious flavors.
This Creamy Penne Chicken Piccata turns an old classic into your favorite comfort food without being too heavy. Yes, there is cream and yes, there is pasta, but the trick to not falling into a food coma after dinner is the lemon. Just the right amount of acid in this dish cuts through the cream and makes for a somewhat light(er) comfort fare. I also chose Fusion® Lemon Twist Sea Salt, instead of an everyday table salt, which added just the right amount of citrus and salty flavor.
Our last few marketing meetings have all ended something like this: “Why don’t we make a line of popcorn sea salt?” And then we all go, “Oooh, yeah!” And then we get up, refill our coffee, head back to our desks, and feverishly work to finish whatever else it is we’re working on at the moment.
It’s a beautiful thing when we can keep up with our ideas, and on Friday, our first step in the Popcorn Salt line happened: The Taste Test. It’s a tough job but we’re willing to do what it takes.
During this time of year we find ourselves in a bit of a catch 22. The weather is gloomy and cold, so we want to eat warm and cozy comfort food. Unfortunately, bikini season is looming right around the corner so we find ourselves choosing between our stomach and our other “assets,” (if you catch my mid-drift).
This dilemma presented itself to me last night on a particularly rainy Seattle evening. As I sat in my kitchen craving some serious mac and cheese, I remembered a recipe I had come across for quinoa with parmesan and garlic. Anytime parmesan and garlic are included in a recipe I know it’s going to be outrageous, but I decided to take it one step further and added Fusion® Black Truffle Sea Salt for an extra layer of rich garlicky flavor.
During the summer, it’s easy to find fresh fruits and veggies at all the local farmers markets in our area. But winters are hard. The produce is often generic and lackluster. So, last night while my daughter and I were craving something fresh, I decided to pick up a package of Organic Baby Kale (by Organic Girl). I figured: my friends are always talking about Kale Chips, so why not try a new snack!
Surprisingly, once I mentioned using some of our stash of SaltWorks Sea Salts, My daughter was full on board. She grabbed the package of kale and dropped it in our basket. Easy enough.
Ready! SET! COOK! The Student Iron Chef competition took place last weekend (Feb. 8, 2014) in Overland Park, Kansas and what a success it was! We contributed salt samples for all of the participants and gift sets for prizes. The competition promotes health and wellness, while inspiring kids and families to cook together.
The event brought together students from K-12th grade for a Food Truck Mash-up competition! Students were divided into teams to create original dishes that were healthy and simple enough to replicate at home. The younger students’ task was to create a cold dish inspired by popular food truck cuisine, while the older students honed their skills at the stove top and grill with the same goal. These are some talented little chefs; we definitely wish we could have been there as taste testers!
The Student Iron Chef competition hopes to get students in the kitchen at an young age to instill those healthy eating values early on. We’re excited about the event’s success and hope to support it for years to come!
